These are some apps you can get on Cydia (if you don't know what Cydia is or how to get it, go here) that are worth downloading. Most are under 30MB.
Ones that are in green are confirmed to be available for both iPod Touch and iPhone. Ones that are in red are confirmed to be only for the iPhone. Ones in yellow are uncertain or sometimes work.

*	Netatalk - tethered modem
*	Winterboard - customize your homescreen, lock screen, icons, etc.
*	TuneWiki - free iTunes
*	dTunes - another free iTunes, uses torrents
*	iPhoneModem - tethered modem
*	Intelliscreen - calendar, email, weather, etc. on your lock screen
*	KeyVib - haptic feedback when typing
*	xGPS - turn-by-turn navigation
*	Clippy - copy-and-paste
*	NES - play Nintendo games (not compatible with iPod Touches because of their slower processor and incompatible software)
*	Search - all folders and files search on iPhone
*	Reminder / Notifier - email, text, voicemail, and missed call notifications in top bar
*	Installous - free downloadable apps that are paid for in the App Store *NOTE: Downloading this app is not illegal, downloading the paid apps for free is illegal*
*	MakeItMine - change the text in the top bar
*	SwirlyMMS - MMS for iPhone
*	VideoRecorder3G - video recording
*	Bochs - iDevice version for the famous OS emulator (note this is NOT a Cydia app, go to YouTube for more info on how to get this) (it runs Windows 3.11, 95, and 98 so far)
*	Hackulous Security - Essentially an antivirus program for your iDevice
*	SpringJumps - jump to pages of homescreen by clicking the icon/app
*	Quake - play the famous first-person shooter on iPhone
*	iBlacklist - block calls and texts from certain people/numbers
*	123 Spoof - prank call people from different phone #s and caller IDs
*	GV Mobile - The Google Voice app that can't make it through the Apple approval process has made its way to Cydia (theoretically can be used on iPod Touches, but you will need to get your own microphone.
*	3G Unrestrictor - Use Slingplayer, Skype, etc over 3G and let yourself download songs and apps over 10MB large without connecting to a WiFi network
